This recipe used really ripe bananas to deliver sweetness. If you peel your over-ripe bananas when you spot them in the fruit bowl and then freeze them they can be added, solid, to the other ingredients which will cut down on freezing time later.
5 or 6 really ripe bananas – the sort you might hesitate to eat
1/2 pint coconut milk
1-2 oz desiccated coconut
2tbs cocoa powder
Sugar to taste – ripe bananas are very sweet
Peel the bananas and place in a blender. Blend roughly before adding the remaining ingredients. Blend until well mixed. Pour into a container and freeze.
Stir the ice cream occasionally over the time it takes to freeze (7 hours or so) to improve the texture of the product. Remove from the freezer 30mins before serving. Grain-free dessert heaven!
