Coconutty Biscuits

Last week I was inspired by a recipe to make some biscuits.  The recipe wasn’t followed but the resulting biscuits were nice so this week I tried to recreate them.  The results were, if anything better than last weeks, and here is how they were made:


3oz desiccated coconut

3oz ground almonds

4oz sultanas

2 eggs

2 tbs golden syrup

Mix everything together in a large bowl.

Shape teaspoonsful of the mixture into biscuit size shapes on a greased baking sheet and press down lightly.
Bake at 180℃ for 12-15 minutes or until lightly browned.
